Vinification:
The wine bottled in a 3L BIB is from the batch bottled in glass. Grapes harvested at full maturity, 48 hours of cold maceration, Manual selection of grapes and berries after destemming. Maceration of the must in the press for 2 hours. Vinification at a controlled temperature between 14-16°C. Batonnage on fine lees.
